
Scrambled eggs with salmon
A delicious Sunday morning breakfast with scrambled eggs, smoked wild salmon from Sea Tales, and some salmon roe! How about a mimosa to go with it?
Delicious with Atlantic or wild smoked salmon from Sea Tales.
Toast the slices of bread in a toaster or under the grill.
Whisk the eggs and milk together with a fork, then season with salt and pepper.
Heat the butter in a frying pan over low heat. Pour the egg mixture into the pan. Stir the eggs with a wooden spoon, taking a 10-second break every 10 seconds. Let the eggs cook slowly. Once the eggs are almost set, add the chopped salmon and half of the chives. Warm through for 1 minute.
Spread the scrambled eggs over the toasted bread and garnish with salmon roe and the remaining chives. Finish with a grind of fresh pepper.
