Grilled tuna steak with asparagus and sesame dressing

It doesn't get fresher than this! From the wharf in the port of Westport, USA, Bart cooks with albacore tuna, aka albacore tuna. Marinated and then grilled on the BBQ with asparagus and a homemade sesame dressing. So delicious!

Recipe - ingredients

  • FOR THE MARINADE
  • 5,3 fl oz olive oil
  • 3,5 fl oz sake
  • 4 sheets of wakame or nori, finely chopped
  • rasp and juice of 1/2 lemon
  • 2 albacore tuna steaks weighing 4,2 oz
  • 10 oz green asparagus, white tips removed
  • FOR THE DRESSING
  • 3 tbsp white sesame seeds
  • 1 tbsp mayonnaise
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • juice of 1/2 lime

  • 1 Turn on the barbecue on medium-high heat.
  • 2 Mix the olive oil, sake and wagame with the lemon's zest and juice. Stir well. Marinate the steaks in the marinade for 30 minutes. Turn halfway through. Set aside.
  • 3 Brush the asparagus with a little oil and sprinkle with salt. Grill them over a medium-high heat for 3-4 minutes. Set aside
  • 4 Toast the sesame seeds and crush them with a mortar. Add the mayonnaise, sesame oil, rice vinegar, soy sauce, mirin and lime juice. Mix well and set aside.
  • 5 Place the tuna steaks on a barbecue grill topper so that the fish do not stick. Grill the steaks 1-2 minutes each side over medium-high heat. Remove from the barbecue and cover the tuna steaks with aluminium foil for 5 minutes.
  • 6 Remove the foil and serve the steaks with the asparagus. Drizzle generously with the sesame dressing and serve with a slice of lime. Enjoy!
