Smoked salmon with Asian dressing

Recipe - ingredients

  • 7 oz Sea Tales smoked salmon
  • 1 cucumber, diced
  • 1 avocado, sliced into strips
  • 1 bunch of spring onion, cut into strings
  • 1/2 red pepper, finely chopped
  • rind and juice of 1 lime
  • 1/2 tbsp olive oil
  • 1 tbsp soy sauce

Recipe - how do you make it

Thinly sliced Norwegian salmon with cucumber and avocado, finished with a fresh Asian dressing. The combination of lime juice, soy sauce and red pepper creates that unique Oriental flavour sensation.

Recipe - steps

  • 1 Slice the spring onion into thin rings and place briefly in ice water. Grate and squeeze the lime. Remove the seeds from the red pepper and cut it into small rings.
  • 2 Mix the lime juice, olive oil, soy sauce, red pepper and lime zest into a dressing.
  • 3 Cut the cucumber in half lengthwise, remove the seeds and cut the cucumber into small cubes. Slice the avocado and drizzle with some lemon juice.
  • 4 Divide the thinly sliced salmon among small plates or place them on a large platter or board. Top the salmon with the cucumber and avocado and drizzle with the dressing and spring onion.
