
White Bean Salad with Tuna
This white bean salad with tuna is a real protein powerhouse. Both the tuna and beans are packed with healthy omega-3 fats. Healthy cooking, straight from the can!
Place the onion in a bowl and add 1 teaspoon of vinegar and enough cold water to cover it. Let it sit for 5 minutes. Drain, rinse with cold water, and then pat dry with paper towels.
Place the white beans in a colander. Rinse them with warm water and let them drain thoroughly.
In a large bowl, mix together the tuna, beans, onion, sage, and parsley.
In a small bowl or measuring cup, combine the remaining vinegar, salt to taste, freshly ground pepper, garlic, and Dijon mustard. Whisk in the olive oil and yogurt.
Toss the dressing with the tuna and beans. Divide onto plates and serve with the cucumber pieces.
