Tuna toasties with cucumber pickles

Recipe - ingredients

  • 1 cucumber, in slices
  • 300 ml white wine vinegar
  • 3 tablespoons of sugar
  • 200 gr fresh tuna or canned
  • 2 till 3 teaspoons sambal
  • 1/2 red onion, shredded
  • 1/2 scallion, in rings
  • 1 lime, the juice
  • 3 sproutes cilantro
  • a few drops olive oil
  • 4 slices of white bread
  • 4 slices of cheddar cheese

FAST AND SPICY TUNA TOASTIE

Toasted bread, perfeclty melted and if you are lucky you will have a piece of crispy cheese that will sneak out during baking. Yes, it’s time for a tuna toastie with cheddar and sambal!

Recipe - steps

  • 1 Add 300 ml white wine vinegar and three tablespoons of sugar tot the pan. Heat it until the sugar has dissolved.
  • 2 Slice the cucumber in half and scoop out the seads.
  • 3 Switch the fire off and cool the sugar down.
  • 4 Peel the cucumber with a speed peeler in thinly slices and add the cucumber to the cold dried sugar.
  • 5 Use 200 grams of tuna, fresh or canned. If you use fresh tuna, cut i tinto small pices.
  • 6 Add 2-3 teaspoons of sambal and slice a half red onion in shredded pieces. Add the tuna tot he bowl.
  • 7 Give it a bit of scallion and add some salt for more flavor.
  • 8 Last but not least add some lime juice , cilantro leaves, a few drops of olive oil and give it a mix.
  • 9 Top the bread off with the tuna, add the cheddar cheese slices and put the other slice of bread on top. Toast the toastie in a pan for about 6-8 minutes or with an iron toast.
  • 10 Plate the tuna toastie up and add the cucumber to finish the dish.
