Bagel with smoked salmon and pea guacamole

You can never go wrong with a bagel. To make it a bit more special, add our pea guacamole. You won't regret it!

Recipe - ingredients

  • 1 avocado, peeled, pitted
  • zest and juice of 1/2 lemon
  • 1 tbsp olive oil
  • 1 small shallot, peeled, finely chopped
  • 1/2 red chili pepper
  • 2 tsp chopped coriander
  • 2 bagels
  • 100 g Atlantic or Sockeye smoked salmon
  • 1/4 cup watercress
  • pepper and salt

Recipe - steps

  • 1 Bring a saucepan of water to a boil. Blanch the peas for 2-3 minutes, drain en place in ice water. Pat dry with kitchen paper.
  • 2 Using a fork, mash the flesh of the avocado and peas. Mix in the lemon juice, olive oil, shallot, chili pepper and cilantro. Season to taste with salt and pepper.
  • 3 Spread the bagels with the pea guacamole. Divide the salmon among the bagels. Top with the watercress and lemon zest. Sprinkle with salt and pepper.
