Cod liver rillette with pickled vegetables

Recipe - ingredients

  • 3 tbsp white wine vinegar
  • pinch of salt
  • 3 tbsp ginger syrup
  • 1/2 cucumber, soft core removed, in thin stripes
  • 1 sourdough bread
  • 1 can of Sea Tales cod liver
  • Pinch of white pepper
  • 1 handful of chives, finely chopped
  • 100 g atjar (pickled vegetables)

Recipe - steps

  • 1 Make a marinade from the white wine vinegar, salt and ginger syrup. Place the cucumber strips in the marinade for an hour.
  • 2 Cut the sourdough bread into slices. Heat some olive oil in a frying pan and toast the bread.
  • 3 Using a fork, mash the cod liver. Use the oil of the can, white pepper and chives and toss a few times.
  • 4 Spoon the cod liver onto the toast.
  • 5 Spread the cucumber and pickled vegetables over the cod liver and garnish with chives. Enjoy!
