Cod liver rillette with pickled vegetables

Recipe - ingredients

  • 1 cucumber
  • 3 tbsp white wine vinegar
  • pinch of salt
  • 3 tbsp ginger syrup
  • 1 baguette
  • olive oil
  • 1 can of Sea Tales cod liver
  • pinch of white pepper
  • 1 bunch of chives
  • 1 jar of pickeled vegetables
  • 1 red onion, cut into thin half rings

Recipe - steps

  • 1 Cut the cucumber in half lengthwise and use a spoon to remove the soft core. Cut a quarter into strips.
  • 2 Make a marinade from the white wine vinegar, salt and ginger syrup. Place the cucumber strips in the marinade for an hour.
  • 3 Cut the baguette into slices. Heat some olive oil in a frying pan and toast the bread.
  • 4 Using a fork, mash the cod liver. Add a dash of olive oil, white pepper and chives and toss a few times.
  • 5 Spoon the cod liver onto the toast.
  • 6 Spread the cucumber and pickled vegetables over the cod liver and garnish with some red onion.
