Cod liver rillette with pickled vegetables
Ever had fish rillette? This version of cod liver is irresistible! Delicious on toast with pickled vegetables, the perfect fresh counterpart.

1 cucumber
3 tbsp white wine vinegar
pinch of salt
3 tbsp ginger syrup
1 baguette
olive oil
1 can of Sea Tales cod liver
pinch of white pepper
1 bunch of chives
1 jar of pickeled vegetables
1 red onion, cut into thin half rings
Recipe - how do you make it
Recipe - steps

Cut the cucumber in half lengthwise and use a spoon to remove the soft core. Cut a quarter into strips.

Make a marinade from the white wine vinegar, salt and ginger syrup. Place the cucumber strips in the marinade for an hour.

Cut the baguette into slices. Heat some olive oil in a frying pan and toast the bread.

Using a fork, mash the cod liver. Add a dash of olive oil, white pepper and chives and toss a few times.

Spoon the cod liver onto the toast.

Spread the cucumber and pickled vegetables over the cod liver and garnish with some red onion.
