Recipe - ingredients

  • mayonnaise
  • crème fraîche
  • salt and pepper
  • 3 cans of tuna in water (drained weight 3 1/2 oz per can), broken into chunks
  • pot grated carrot (or grate a fresh carrot)
  • jar of pearl onions
  • pot of sour gherkins, cut into pieces
  • roasted sandwiches
  • Cup of garden cress (star cress)

Recipe - how do you make it

Smos tuna is the Flemish version of the Dutch tuna salad. Smoshing means messing, spilling but also fiddling, which in this case results in a tasty scoop salad. There are no quantities indicated with the dish. Rumble yourself, as long as you process the tuna in large pieces.

 

Recipe - steps

  • 1 Turn equal parts of mayonnaise and crème fraîche into a light mayonnaise.
  • 2 Season the mayonnaise to taste with some salt and pepper.
  • 3 Spoon the pieces of tuna with the carrot grater, pearl onions and gherkin through the mayonnaise.
  • 4 Spoon the smos on roasted sandwiches and garnish generously with cress.
