Buenos Dias! These Mexican fish tacos are full of different flavours and textures. Dip your tacos in the delicious home made sauce and impress your friends with this colorful dish!

5,3 oz flour
1 tsp baking powder
1 egg
6,7 fl. oz milk
3 tbsp yoghurt
3 tbsp sour cream
zest and juice of 1 lemon
1 tbsp horseradish cream
4 mint leaves, finely chopped
2 tomatoes, without seeds and diced
2 garlic cloves, finely chopped
1 spring onion, finely chopped
1 hand full of coriander, finely chopped
olive oil, extra virgin
8 small tortillas
28 oz haddock filet, cut into 5 cm pieces
8 lettuce leaves
1 red onion, cut in rings
1 avocado, deseeded and diced
2 chillies, cut in rings
zest and juice of 1 lime
4 sprigs of coriander, leaves roughly chopped
oil, for frying

Recipe - how do you make it
Recipe - steps
1 Mix the flour and the baking powder in a big bowl. Mix it with the milk. Then add the egg and while you whisk until you have a smooth batter. Add a pinch of salt and put it in the fridge.
2 For the sauce, mix the yoghurt, sour cream, lemon zes, lemon juice, the horseradish cream and the mint. Season with salt and pepper and set aside.
3 Make the salsa by mixing the tomato cubes with the garlic, spring onion, coriander, olive oil and salt and pepper. Set aside.
4 Heat up the tortillas on both sides in a frying pan and set aside.
5 Pat the fish dry with kitchen paper. Season both sides with salt and pepper. Cover them in batter and deep fry the haddock until golden brown and crispy (3-4 minutes).
6 Make your tacos by adding lettuce, fried fish, the salsa, onion rings, avocado cubes and the chilli. Fold them, add lime zest and serve with the sauce, coriander and lime parts. Enjoy!
