TARTARE
1 can of Sea Tales sardines
5 sun-dried tomatoes, finely chopped
handful of black olives, finely chopped
1 tbsp capers, finely chopped
handful of basil, finely chopped, plus extra for garnish
juice of 1/2 lemon
pepper
salt
olive oil
SALAD
1 red tomato, remove seeds, coarsely sliced
1 green tomato, remove seeds, coarsely sliced
1 yellow tomato, remove seeds, coarsely sliced
olive oil
red wine vinegar
salt
1,5 oz soft goat cheese
Recipe - how do you make it
Recipe - steps
1 Mash the sardines with a fork and mix with the capers, sun-dried tomatoes, olives and some chopped basil leaves to make a tartar. Finally, add the lemon juice, olive oil and a pinch of salt and pepper. Mix well. Set aside.
2 For the salad, mix together the tomatoes, olive oil, red wine vinegar and a pinch of salt.
3 Divide the salad among plates. Place two tablespoons of tartar on top of the salad. Crumble the goat cheese over the tartare. Garnish with a pinch of black pepper, olive oil and basil. Enjoy!
