Place the cucumber under plastic wrap and hit it with a rolling pin until the seeds come loose and pieces form.
Mix the smashed cucumber pieces with the garlic, coriander, sugar, salt, chili oil, rice vinegar, and soy sauce, and stir well. Set aside for at least 30 minutes. If you have time, let it sit overnight.
Add the mackerel and toss through the cucumber. Garnish with sesame seeds and serve immediately. Enjoy!
