German potato salad with albacore tuna
When you think of Germany, you probably think of kartoffelsalat - the potato salad. This version with albacore tuna gives a surprising twist to this classic. Highly recommended!

Bring a pan of water to a boil with some salt. Cook the potatoes for 15 minutes
In a frying pan, cook the bacon until crispy. Remove the bacon and keep the rendered fat in the pan. Return the pan to high heat and add the vinegar, water, stock cube, and sugar. Bring to a boil and let it reduce for 2 minutes.
Drain the cooked potatoes, return the potatoes to the pan and spoon in the onion, chives, parsley and tuna. Let the flavors infuse for 20 minutes with a lid on the pan. Serve the potato salad lukewarm.
