Tuna Tartine by Le Pain Quotidien

  • 1 slice of organic wheat sourdough bread
  • 2 tablespoons tuna in water
  • lemon juice of 1/8 lemon
  • 1 pinch of pepper
  • 1 tbsp mustard (still)
  • 1 sprig of parsley
  • 1 tbsp hummus
  • 1 tbsp chickpeas
  • ½ tbsp capers
  • 1 branch of dill
  • 1 spring onion
  • 1 slice of lemon
  • 3 slices of cucumber
  • 3 slices of radish

Recipe - steps

  • 1 Open the can of tuna and drain the liquid.
  • 2 Finely chop the parsley.
  • 3 Then mix two tablespoons of tuna with mustard, lemon juice, parsley, and pepper. Put the tuna salad aside.
  • 4 Cut off the crusts on the left and right side of the bread.
  • 5 Spread the hummus evenly on the bread.
  • 6 Divide the tuna salad over the hummus. Be gentle! You don't want to squash the hummus too much.


  • 7 Sprinkle chickpeas, spring onion, capers and finely chopped dill over the tartin.
  • 8 Cut the tartine into five pieces and place on a plate.
  • 9 Garnish the tartine with cucumber, radish and lemon slices.
