Recipe - ingredients

  • 7 oz spinach
  • 8,5 fl oz of milk
  • 4,5 oz of flour
  • 3 eggs
  • sockeye smoked salmon
  • 1 avocado
  • 1 lemon
  • 1 red onion
  • cherry tomatoes
  • 1,8 oz cream cheese
  • handfull rocket
  • dill
  • salt and pepper

Recipe - how do you make it

Here is one for the picky eaters (or the parents of picky eaters): healthy pancakes. It’s like a dream come true. There are vegetables in the pancakes, but you won’t see them. To top it off, we use our delicious wild salmon from Alaska: sockeye salmon.  Enjoy!

Recipe - steps

  • 1 To create the batter, puree the spinach. Add 250 ml of milk. Then add 120 gram flower and mix that well. Add one egg and a bit of salt and mix it. keep this in the fridge until you start making the pancakes.
  • 2 Hard-boil two eggs (8 minutes).
  • 3 While the eggs are boiling, slice the onion and, cherry tomatoes.
  • 4 Open the sockeye smoked salmon. By opening the package you give it a bit oxygen and this will enrich the flavor of the smoked salmon
  • 5 Next step, the avocado. Slice the avocado. To avoid the coloring of the avocado you give it a few of lemon drops.Take a red onion and slice it. Half the cherry tomatoes.
  • 6 'Scare' the eggs by holding them under cold water. Peel the eggs.
  • 7 Take the batter. Have your frying pan on medium to medium-high heat. When it is heated, add butter. After two minutes close it with a lid for another two minutes. Flip it over and bake it about 30 seconds more.
  • 8 Put the cream cheese on the pancake. Top it off with the Sockeye salmon, the avocado, red onion, cherry tomatoes and, a few leaves of rocket. Then a drizzle of olive oil
  • 9 Put the egg in a sieve and press on it with a spoon. Finish with some black pepper and a tiny bit of sea salt, not too much because the smoked salmon has this salty flavor already.
  • 10 Then at last but not least, top it off with the dill. Enjoy!
