Recipe - steps

  • 1 Thinly slice the cassava, sweet potato, beetroot and carrot with a mandoline or slice. Let them dry separately on a wire rack for 30 minutes.
  • 2 Make the aioli: Crush the garlic and bread with a pinch of salt in a mortar to a paste. Mix in the egg yolk with a whisk and then add the olive oil drop by drop while stirring. a mayonnaise-like structure slowly develops. Season with lemon juice, salt and pepper.
