Whole sardines on the BBQ

Sardines from the bbq are delicious, especially with salsa verde! In this recipe we show you how to make them yourself from start to finish.

Recipe - ingredients

  • Whole sardines, 4-6 pieces per person
  • Handful of mint leaves
  • Handful of cilantro (stalks and leaves)
  • 1 Large garlic clove, roughly chopped
  • 1 Teaspoon of mustard
  • 1 Teaspoon of red wine vinegar
  • Zest and 1/2 lemon
  • Olive oil
  • Vegetable oil to brush
  • Coarse salt
  • Pepper

Recipe - how do you make it

If you don’t like cleaning the sardines yourself, you can also ask your fishmonger to do this!

Recipe - steps

  • 1 Light the barbecue.
  • 2 If you clean the sardines yourself descale them as follows: Hold a sardine just underneath its head between your index finger and your thumb. Slowly move towards the tail, putting just enough pressure on the fish to take the scales off. Repeat a few times until all the scales are removed.
  • 3 Now make a small incision just underneath the head with a small knife and carefully take out the guts. Now wash the fish under slowly running water and pat-dry the fish with kitchen paper.
  • 4 Arrange a good amount of coarse salt on a kitchen tray and lay the sardines in the salt. Sprinkle more salt on top and set aside for half an hour so the salt can extract some of the moisture out of the fish. In this way, the fish will cook crispier.
  • 5 Use a pestle and mortar or kitchen blender to make the green salsa. Crush the garlic with some salt. Now add the herbs. Grind them until a smooth paste. Add the juice of the lemon, vinegar and around three to four tablespoons of olive oil and mix well until a smooth salsa. If you like, add some mustard to make the salsa creamier. Season with pepper.
  • 6 Lightly brush some oil on the fish rack and then sandwich the sardines in the rack. Grill them 4-6 minutes – depending on the size - on each side until the sardines are crispy and golden-brown on the outside but still juicy from the inside.
  • 7 Serve the sardines straight from the grill and cover them with the green salsa and some lemon zest. Nice with some extra lemon. Enjoy!
