  • 1½ cups of yellow cherry tomatoes
  • 1½ cups of red cherry tomatoes
  • 1 yellow bell bell pepper
  • 1 red bell bell pepper
  • 2 cans of Sea Tales Sardines in olive oil, drained
  • salt and pepper
  • 1½ tablespoons extra virgin olive oil
  • 3 sprigs of fresh basil, leaves removed
  • 3 sprigs of fresh thyme
  • 1 half lemon
  • zest of 1 lemon

Recipe - steps

  • 1 Preheat the oven to about 390 °F. Cut the peppers into small cubes and rinse them along with the tomatoes. Then spread them out on a large baking dish.
  • 2 Brush the tomatoes and peppers with olive oil and season with a pinch of salt and bell pepper. Now put the casserole dish in the oven for 10 minutes.
  • 3 Heat a frying pan with a dash of olive oil over high heat. Fry the sardines for 5 minutes on each side. Then take the tomatoes and peppers out of the oven.
  • 4 Place the sardines on top of the diced tomatoes and peppers. Then add basil and thyme before adding the zest of the lemon and using its juice to round out the dish. Serve with slices of sourdough or crusty bread and enjoy.
