Pasta Pistou with Sardines

Pistou is a sauce that we know from French cuisine. The sauce can be compared to pesto, but is not the same. No pine nuts are used for pistou sauce. The basil-based sauce is recognizable by its bright green color and is full of flavour. Together with the sardines, this is a delicious main course that is finger licking good!

  • 1 bunch of basil
  • 2 cloves of garlic
  • 3,5 fl oz olive oil
  • 2 oz grated Parmesan cheese
  • 1,5 oz pine nuts
  • Salt & black pepper
  • 2 cans of sardines
  • 7 oz spaghetti

  • 1 Save the small leaves of basil and a handful of pine nuts for garnish.
  • 2 Put the basil, garlic and olive oil in a measuring cup and grind with a hand blender (or a mortar and pestle), then add the grated cheese and mix again until the cheese is well mixed with the pistou. Season with black pepper.
  • 3 Cook the spaghetti according to the instructions on the package. When draining, keep 2 tablespoons of cooking water and mix this together with the pistou through the pasta.
  • 4 Divide the pasta over 2 plates and divide 1 can of sardines per plate over the pasta.
  • 5 Garnish with basil leaves and pine nuts.
