Glazed salmon with a crumble of walnut

Recipe - ingredients

  • FOR THE CRUMBLE:
  • handful of unroasted, unsalted walnuts, finely chopped
  • 1 tbsp breadcrumbs
  • 1 tbsp room temperature butter
  • 3 sprigs of dill, finely chopped
  • zest of 1/2 organic lemon
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • FOR THE SALMON:
  • 1/2 tsp honey
  • 1 tsp smooth French mustard
  • 1 tbsp butter
  • 1 clove of garlic, finely chopped
  • chard, cut into 10 cm pieces
  • 7 ounce Swiss chard
  • 8,5 ounce salmon, skinless and in 2 slices
  • salt and pepper

Recipe - how do you make it

Recipe - steps

  • 1 Preheat the oven to 350 °F (180 °C).
  • 2 Mix the walnuts with the breadcrumbs and butter. Add the dill, lemon zest, salt and pepper and knead until you get a crumble. Set aside.
  • 3 Scoop the butter into a baking tray and melt in the oven for 1 minute. Then add the garlic and some salt and pepper. Mix the chard with the butter-garlic mixture and spoon some of the mixture onto the chard.
  • 4 Place the salmon on the chard and brush the top and sides generously with the mustard-honey mixture.
  • 5 Divide the crumble over the salmon and place in the oven for 12-15 minutes, until the fish is cooked and the crumble is golden brown.
