This recipe is from the new cookbook Veggies & Fish by our founder Bart van Olphen. We love Japan and Japanese cuisine. This salmon salad is one of our favorites. Tataki is a Japanese preparation method where you briefly sear the fish on the outside. This creates a crispy layer on the salmon and gives the fish a pleasant bitterness. A real treat for sashimi lovers because the salmon is still deliciously raw on the inside!
