Deep-fried prawn tempura

  • Vegetable oil for deep-frying
  • 12 1/2 -ounce prawns, deveined and shells removed
  • For the batter:
  • 1 egg
  • 7-ounce plain flour
  • 3/4 cup ice-cold water
  • A bit of flour
  • For the sauce:
  • 3 tbsp light soy sauce
  • 2 tbsp of mirin
  • 3 tbsp of sake
  • 0.4 inch freshly grated ginger

How to prepare

A classic Japanese recipe! Such an easy and quick snack or starter. But also the perfect finger food next to an ice-cold beer.


  • 1 Heat oil for deep-frying to 355 Fahrenheit degrees in a deep fat fryer saucepan.
  • 2 For the sauce add soy sauce, mirin, sake, and ginger and stir well. Set aside.
  • 3 For the tempura batter:
    Crack an egg in a bowl. Add a bit of flour to the egg and give it a little whisk. Add the rest of the flour and ice-cold water, give it a whisk, but don’t over-whisk it. Dust the peeled prawns with a bit of flour and then pour into the batter.
  • 4 Deep-fry for 3 minutes until golden and crispy. Drain the prawns on kitchen paper. Serve with the sauce and enjoy!
