Ingredients

  • 8 slices of sourdough bread or farmhouse bread
  • 4 tbsp mayonnaise
  • 2 tbsp cream, slightly lobed beaten
  • 1 tbsp lemon juice
  • 1 bunch of watercress, washed and picked
  • 1 shallot, cut into rings
  • 4 smoked mackerel fillets of 3 - 7 -ounce
  • 1 tsp lemon juice
  • salt and pepper

How to prepare

This toast with mackerel can’t be missed on your foodplatter! Simple, easy and refreshing because of the lemon and watercress!

Preparation

  • 1 Toast the slices of bread under the grill or in the toaster on both sides crispy and nice brown.
  • 2 Mix the mayonnaise with the cream and lemon juice. Season to taste with salt and pepper.
  • 3 Cover the bread with the mixture and put some watercress on top. Then put the mackerel fillets and the shallot rings on top. Grind some more pepper over the mackerel. Garnish with the lemon rind.
