
Shakshuka with sardines

Heat a splash of olive oil in a frying pan with a lid over medium heat and sauté the onion, garlic, bell peppers, and chili pepper for 3-4 minutes until softened.
Add the diced tomatoes, harissa, tomato paste, and cumin, and let it simmer on low heat for 15 minutes.
Make four indentations in the tomato sauce and crack an egg into each indentation. Press the sardines around the eggs, cover the pan, and let the eggs set for 10 minutes. Season with salt and pepper, sprinkle with lemon zest, and serve with plenty of coriander.
